recipe: quick eggs

butter (we love Kerrygold!)
salt and pepper

Place a small pat of butter in a porcelain silo mug—it adds flavor and keeps the egg from sticking to the mug.

Drop in one egg, cover with a microwave cover or paper towel since they can pop, and microwave for 35-40 seconds.

Salt and pepper to taste and enjoy quickly—they’re pretty much gone in two-bites!

hint: Every microwave is different so it may be a few seconds more or less. Increase time for more than one egg or mug.

recipe: hearts of palm summer salad

sliced hearts of palm
fresh avocado
sliced or diced celery
sweet corn
shaved parmesan
light olive oil
salt and pepper

For casual summer entertaining, mix all ingredients to taste and enjoy!

recipe: ombre summer cocktail

El Gusano Rojo

1-½ ounces mezcal
½ ounce passion fruit nectar
2 ounces chilled ginger beer
½ ounce grenadine

Fill a cocktail shaker with ice
Add the mezcal and passion fruit nectar
Shake well
Strain the drink into an ice-filled cooler—the taller the better
Stir in the chilled ginger beer
Drizzle the grenadine on top—which will sink to the bottom for the ombre effect

1L ginger ale
3 small containers lemon/limeade frozen concentrate

ice block:
scoop one layer of maraschino cherries into a mini-loaf pan
fill with water and freeze
add to punch in large punch bowl

*bow tie optional

recipe: lauren's low carb sweet

Any morning you might mix these ingredients into a bowl and eat with a spoon. But why not surprise everyone by preparing them as a finger food for an office breakfast? Or a light and refreshing dessert?

apples, bite size sliced
Greek yogurt, a dollup on each
raw granola, sprinkled on top

Any variety of apples and granola will work, but the thicker Greek-style yogurt is key to keeping it neat.
